Ingredients

    1 Tbsp. butter or margarine
    1/2 medium green bell pepper, chopped
    1/2 medium onion, chopped
    1 can (14-1/2 ounces) beef broth
    1 can (15-1/2 ounces) red kidney beans, drained, rinsed
    1 Tbsp. Cajun seasoning
    2 cups MINUTE White Rice, uncooked
    Hot pepper sauce (optional)

Directions

MELT butter in large skillet over medium heat. Add bell peppers and onions; cook and stir until crisp-tender.

ADD broth, beans and seasoning; stir. Bring to a boil.

STIR in rice; cover. Remove from heat. Let stand 5 minutes. Fluff with fork. Serve with pepper sauce, if desired.

    Very Good
