Introduction

We serve this over kelp noodles for a sort of Asian/Latin fusion dish. We serve this over kelp noodles for a sort of Asian/Latin fusion dish.

Ingredients

    1 medium onion, minced
    1 large carrot, split into quarters and sliced
    1 Tbl minced garlic
    1 cup chopped parsley
    2 stalks celery, chopped
    1 cup okra, sliced
    1 Tbl. olive oil
    1 1/2 cups Pomi diced tomatoes
    4 cups water
    1 tsp. salt
    1 1-lb. bag frozen seafood mix

Directions

Heat olive oil over medium-high heat in a 6-qt saucepan. Add onion. Saute until translucent. Add garlic. Saute 2 minutes. Add carrots, celery, parsley, and salt. Saute 5 minutes. Add tomatoes, okra, and water. Bring to a boil and reduce heat to simmer. Simmer 25 minutes. Add seafood mix (it's okay to add it still frozen). Increase heat to return to simmer. Once the soup is simmering, reduce heat and simmer 5 more minutes. Serves 8 as a soup course, 4-6 as main dish.
