Ingredients

    1# extra lean ground beef
    1/2 cup onions
    2 cloves garlic

    1 can tomatoes, no salt added
    1/2 tsp cayenne pepper
    1 tsp oregano
    1/3 cup cilantro
    1.5 tsp cumin
    1/4 c. chili powder

    1 bottle light beer
    S & P to taste

Directions

Saute ground beef, drain. In same pan saute onions and garlic.

Add beef, onions, and garlic to crockpot.

Add rest of ingredients (except red beans)
and cook on low for 4 hours. Add beans the last 1/2 hour of cooking time. Stir.

Makes 12 servings

Top with any or none of the following:
Parmesan cheese, tomato bits, parsley, sour cream, lime juice. These calories are not figured into the recipe yet.
