Number of Servings: 6


    Get 4- 1lb Maine lobsters on shell (frozen ok)
    1 cup of bread stuffing
    1/2 cup parmesan cheese
    1/2 cup of white wine
    1/2 cup of mushrooms
    2 T of butter
    1/4 cup of onions
    1/2 cup chicken broth
    1 cup of skim milk
    1 clove of garlic
    chopped parsley
    1 teas of cajun spices
    1 teas of paprika


Defrost lobsters to room temp, add them to big pot of salted hot water, boil for 8 minutes. Cool lobsters, then take off the shell - chop lobster (reserving the shells).

Saute Mushrooms/onion/garlic in 1 teas of butter, reserve.

Melt butter in sauce pan, mix in flour, make a roux.
Gently add the milk, reduce for 3 minutes, then add the wine, mushroom/onion/garlic mixture, reduce a little more.
Mix the bread crumbs, spices, parsley with the chicken broth, let the bread absorb the broth then add to the sauce, with 1/2 cheese, and lobster.

Spoon mixture on-top of the shells, sprinkler paprika and a little parmesan cheese on top. Bake 350 for 25 minutes (or until top is toasted).

Or you can forget the lobster shells and spoon on top of a 1/2 round of baked squash!
