Ingredients

    2/3 cup whole grain penne pasta
    1 4 oz salmon fillet
    1 roma tomato diced
    1/4 cup diced green pepper
    2 Tbsp mushrooms (canned)
    3 pieces of marinated artichoke hearts
    2 Tbsp Olive Oil

Directions

Boil pasta. Pan grill salmon in olive oil, break apart as it cooks. When pasta is drained place back in pan, add artichokes, mushrooms, tomatoes, and peppers. Heat through and season to taste.
