Ingredients

    2 tsp olive oil
    1 shallot, thinly sliced
    2 cloves garlic, crushed
    1 lb fresh spinach
    2 Tbsp Smart Balance spread
    1/4 cup whole wheat flour
    1 1/2 cups light soy milk or skim cow
    1 tbsp powdered vegetable bouillon

Directions

Heat the oil in a skillet and caramelize the shallots and garlic, then add the spinach and season to taste (I use Tony Chachere's), then set aside.

In a small saucepan, heat the Smart Balance then add the flour and whisk till very light nutty brown-- tan-ish. Then add the milk and bouillon and whisk over medium-high flame or until mixture thickens, about 3-5 minutes. Pour over spinach and stir to combine. Add a bit of fresh nutmeg if you like and adjust seasoning.
