Number of Servings: 6


    Chicken Breast, no skin, 20 ounces
    Onions, raw, 1 medium (2-1/2" dia)
    Potato, 1 cup peeled and cut up
    Carrots, raw, 1 cup, chopped
    Frozen Small Green Lima Beans, 9 oz bag
    Diced Tomatoes, 14 1/2 oz can
    Coconut Milk, 1 cup
    Chicken Broth 99% Fat Free, 1 cup
    Cumin seed, 1 tbsp
    Curry powder, 1 tbsp
    Hot Pepper Sauce, .25 tsp
    Parsley or Celantro to garnish
    Salt and Pepper


Cut up chicken into bite size pieces. Cut up potato into bite size pieces. Chop onion. Mix all ingredients except parsley or cilantro in large microwave safe bowl. Cover tightly and microwave for 30-40 minutes on high until chicken is done.
