Introduction

Easy and tasty soup, and filling too! Easy and tasty soup, and filling too!
Number of Servings: 10

Ingredients

    1 medium cabbage
    1 medium onion
    3 garlic cloves
    2 celery stalks
    1 tsp olive oil
    1 can black beans (19 fl oz)
    1 can diced tomatoes (28 fl oz)
    1 tsp thyme
    ~ 6 Tbsp fresh parmesan cheese, grated
    salt and pepper to taste

Directions

Chopped all vegetables and sauteed in heated olive oil, add the thyme, the tomatoes and drained black beans. Add 3 cups of water or broth (diluted as per instructions). Bring to a boil cover and let simmer 45 minutes.
Serve with the parmesan on top.
Makes app. 10 serving of one cup .

    Bad
    The good ... easy to make / extremely healthy.
    The bad ... a tasteless mass of overcooked vegetables. The 'Parm' cheese ... was no help.
    The ugly ... not cloves, cumin, more thyme, nutmeg, pepper, salt, nor more garlic helped.
    The possible ... add sausage.

    Incredible!
    SO good!!! I didn't have plain diced tomatoes, just the ones with oregano and basil, so I used those instead of the plain and thyme. Very filling, froze a few servings, too. Even my 16 month old liked it. :) - 1/28/11

    Just added 8 oz. of italian sausage (goes great w/ cabbage!) and used 1 qt of vegetable broth. Added some chopped carrots & chopped kale to make an all around great soup! Everybody liked it! - 11/6/10
