Introduction

a low-fat version of Carrabba's with a little more zip ! a low-fat version of Carrabba's with a little more zip !
Number of Servings: 16

Ingredients

    1 lg carrot
    1 lg onion
    2 stalks celery
    3 cloves garlic
    1 tbsp olive oil
    1-14oz pkg healthy ones skinless smoked sausage (made w/turkey & pork)
    8 cups fat free low sodium chicken broth
    1 - 28 oz can crushed tomatoes
    2 cups dried lentils
    1 tsp salt
    1 tsp black pepper
    1 tsp red pepper flakes
    1/2 tsp oregano
    1/2 tsp thyme
    1 bay leaf

Directions

Dice fine the 1st 4 ingredients and saute in the oil (I use a food chopper). Remove veggies from pan, add sausage and brown. Add chicken broth, veggies, crushed tomato, lentils and spice.
Simmer 45 min. Remove bay leaf - adjust seasoning to taste (I add cayenne pepper to spice it up more). Makes 16 1-cup servings - Sprinkle with grated parm/romano before serving.

    Incredible!
    This is really delicious. I added in some pot barley and a splash of red wine vinegar. It freezes beautifully and makes a great lunch on a workday. - 10/13/13

    I LOVE this soup! The ingredients are inexpensive and it tastes absolutely delish! I was wary of using so much chicken broth (sodium) & was only making enough for myself so I instead used 1 cup of water and 1 cup of chicken broth. I thought it wouldn't have as much flavor, but I am glad I was wrong! - 10/2/09
