Introduction

This is a casserole I grew up with. It sounds weird, but I always liked it. To make lower-fat, use leaner ground beef or turkey and low fat soups. I did cut the beef down from 1 lb to 1/2 lb and added 1 cup of cooked wheat berries instead. This is a casserole I grew up with. It sounds weird, but I always liked it. Ingredients

    1/2 lb. ground beef, lean
    2 medium onions, chopped
    1 can cream of mushroom soup
    1 can cream of celery soup
    1/2 cup uncooked rice
    1 cup cooked wheat berries
    2 Tbsp. soy sauce
    1 1/2 cups chow mien noodles--crunchy Chinese noodles (enough to cover top of casserole to your liking)

Directions

Brown ground beef and onion until beef is done and onion is tender.

In a 9 x 13 pan mix together beef mixture, soups, rice, wheat berries and soy sauce. Cover with foil.

Bake at 350 degrees for 40 minutes.

Uncover, stir, and sprinkle with Chinese noodles over top. Cover loosely and bake for 20 more minutes.
