Number of Servings: 4


    4 red or white new potatoes, 8 oz total
    3 large eggs and 2 large egg whites
    1/2 cup chopped onion
    9 oz raw spinach (about 9 cups)
    2 oz goat cheese
    1/2 tsp dried oregano
    1/2 tsp salt
    1/4 tsp freshly ground pepper

    cook time 15 mintues


Preheat broiler
Cut unpeeled potatoes into 1/4 inch slices. place potatoes in a saucepan and add water to cover. Bring to a boil. Reduce heat to low, cover and simmer 3-4 mintues, or until tender.
Drain potatoes in a colander; set aside.
In a bowl, whisk whole eggs, egg whites, salt, pepper and fresh oregano (1/2 tsp). In a 9-inch skillet, heat 1 tbs oil over high heat. Add onion; saute 1 minute or unitl translucent. Add spinach and saute 2 mintues or until leaves are just wilted. Add potatoes and mix well; spread evenly in skillet.
Drizzle remaining oil around sides of skillet. Pour in egg mixture. Cook 2 mintes, or until eggs just start to set at edges.
Sprinkle goat cheese evenly over the top of the frittata.
broil 4 inches from heat for 1-2 mintes or unitl top is puffed and golden.
Using a paring knife, loosen frittata from sides and cut into 4 wedges.
