    1 pound dried red beans
    3 Tbsp olive oil
    1 1/2 cup chopped onion
    1 cup chopped green bell pepper
    1 cup chopped celery
    2 Tbsp minced garlic
    1 can chopped tomatoes
    2 tsp dried oregano
    1 tsp dried thyme
    3 bay leaves
    1 tsp paprika
    1/2 tsp cayenne
    2 tsp ground cumin
    1/4 cup vinegar
    1 tsp Tabasco (or to taste)
    red pepper flakes
    salt pepper


Soak, rinse and cook beans.
Heal oil in heavy saute pan over med heat. When hot, add onions, bell pepper, celery and garlic. Saute 3 minutes or until veges begin to soften. Stir in tomatoes, herbs, spices and vinegar. Cook about 15 minutes until veges are tender. Scrape into beans. Add Tabasco, red pepper flakes and salt and pepper to taste. Place beans over med heat and cook 10 minutes or until heated through. Makes about 12 1 cup servings.
Serve over cooked rice.
