    1 Lb Boneless Skinless Chicken Breast (chopped in bite sized pieces)
    I Cup Chicken Broth
    1 10oz Can Rotel Diced Tomatoes with Chilies
    1 Green Pepper (chopped)
    1 Red Pepper (chopped)
    1 Onion (chopped)
    1 16oz Can Black Beans (drained & rinsed)
    11/2 Cups Corn (frozen)
    1 tsp garlic
    1 Tbl Chili Powder
    1 tsp Ground Cumin
    1/2 Cup Instant Rice


Spray a skillet with non stick cooking spray and saute the chicken, red & green peppers, onions, and garlic for about 10 min or until tender. Add chicken broth, tomatoes, spices, garlic, and black beans and bring to a boil, reduce heat and cook for another 5 mins, then add corn and rice and cook another 5 min.
