Light shrimp and noodle dish. Light shrimp and noodle dish.
Number of Servings: 4


    12 oz shrimp, peeled and devined
    1/8 black peper (to taste)
    1/8 salt (to taste)
    2 Tablespoons Olive oil
    4 garlic cloves
    10 ounces uncooked fettuccine
    1 can diced tomatoes, undrained (about 2 cups)
    1/2 cup chopped parsley


1- Bring a large pot of water to boil.
2- Season shrimp w/ salt and pepper.
3- Heat olive oil in nonstick pan over medium heat.
4- Add garlic and cook for 1-2 minutes or until golden.
5- Add noodles to water and cook.
6- Add shrimp to pan and cook on high for 3-4 minutes or until golden.
7- Add tomatoes, garlic and shrimp and simmer.
Drain noodles.
8- Serve and eat.
Makes 4 portions.
