Ingredients

    Approx. 17-18 corn tortillas
    Approx. 1 lb chicken breasts, cooked, flavored*, & shredded
    1 cup 2% shredded cheese
    2 small cans cream of chicken soup - 98% fat free
    3/4 cup fat free sour cream

    *Flavors for the chicken could include: cayenne pepper, chili powder, garlic powder, cumin, onion powder, etc.

Directions

Heat oven to 350 degrees. Combine soup and sour cream in a pan and heat to boiling. Remove from stove. Dip about 6 tortillas in mixture one at a time and line the bottom of a 9x13 pan. Layer with chicken and cheese. Repeat with another layer of tortillas, chicken, and cheese. Finish with a layer of tortillas and sprinkle top with the remaining cheese. Other toppings could include: chopped tomatoes, chopped onions, chopped green peppers, green chile, etc. Bake in oven for approximately 20 minutes.

Serves approx. 8.
