Introduction

This is really simple and very good. I took the whole batch to work and it vanished! This is really simple and very good. I took the whole batch to work and it vanished!
Number of Servings: 4

Ingredients

    4-5 ounces of raw scallops
    One bag of frozen stir fry veggies (I used Walmart's brand)
    One box of Rice-a-roni Wild and long grain rice mix
    1/2 onion chopped
    2 teaspoons chopped garlic
    Cooking spray

Directions

Cook rice according to package directions.

Scramble eggs.

Spray skillet or wok with cooking spray. Saute onion and garlic till soft. Add rice and stir till hot. Push to sides of skillet and add entire bag of veggies. Stir 5-7 minutes till thawed and hot. Add scallops and stir fry another 5-7 minutes. Mix everything together and push to sides of pan. Pour eggs into center of rice mixture. Cook eggs till set, then stir them into rice mixture. Add soy sauce to taste and serve.
