    2 cups shredded cheddar cheese
    12 oz chicken breast
    2 cans enchilada sauce (or 3 cups of salsa)
    2 cans refried beans, fat free
    20 8-inch flour tortillas


Bake chicken and dice or shred. Mix chicken, cheese, beans and enchilada sauce to create the filling. Working with half the mixture, fill 10 tortillas with the filling.

If freezing, wrap tortillas tightly around the filling and wrap in plastic wrap or tinfoil. Freeze in a freezer bag. Cooks in a microwave very well for lunches on the go.

If eating right away, bake rolled tortillas in a baking dish at 350 for about 10-15 minutes, just enough to heat through.
