Ingredients

    1 15.25 oz can of black beans
    1 14.5 oz. Fire Roasted diced tomatoes
    1 jalapeno pepper, chopped
    1/4 cup scallions/green onion, chopped
    1/4 cup cilantro, chopped
    1/2 a large lemon

Directions

1. Drain black beans and rinse with cold water to rinse off the sugars that cause gassy effects.

2. Pour into a pot. Add can of tomatoes with juice and all. Add jalapeno, cilantro, green onions & lemon juice. Let simmer for about 7 -10 minutes. Voila! Serve as a side dish or with tortilla chips as a dip.
