Introduction

I love okra fry bread, but my body didn't appreciate all the oil used to prepare it! So I came up with this healthier alternative... I like having these as a side with soup. Ingredients

    1/2 cup Millet
    1 1/4 cups Water
    1 package frozen Okra (10 oz), thinly sliced
    1 small Onion, chopped
    2 tsp Chili powder
    2 Jalapeno Peppers, chopped
    1 tsp hot sauce
    1/2 cup Water, tap
    1/2 cup Whole Wheat Flour
    2 medium Eggs
    2 -3 slices of whole wheat Bread

Directions

Bring 1 1/4 cups of water to a boil. Add millet, stir and cover. Reduce heat to simmer and cook about 15 to 20 minutes, until millet has absorbed the water. Set aside to cool.

Preheat oven to 370 degrees (F).

Mix all ingredients except for bread. (Hint - it's easier to slice the okra if it's still partially frozen)

Put bread slices in a blender and spin them up until they become fine crumbs.

Oil a cookie sheet. Put some crumbs on a plate. Scoop out about a sixth of the batter and put it on the plate, patting it into a patty as you place it. Pat some more crumbs onto the patty and then carefully place it on the cookie sheet. Repeat until the batter is used up. You should have six patties.

Bake at 375 degrees for 1/2 hour to 45 minutes, until firm and browned. Use a spatula to transfer them to a wire rack to cool.

This makes six servings
