    1 kilo (2.2 lbs) lean Ground Beef
    1 medium carrot peeled
    1 cup zuccini
    1 medium onion
    4 tbls. fresh parsley
    1 medium fresh egg
    2 tbls. Balsamic Vinegar
    2 tbls. Extra Virgin Olive Oil
    4 tbls. finely ground whole wheat breadcrumbs
    red and black pepper to taste


1.) Mix all ingredients, EXCEPT ground beef, in food processor. Process until all mixture is consistency of a thick soup.
2.) Add mixture to ground beef, mixing and kneeding thoroughly with hands.
3.) Separate into 6 equal parts
4.) Form into patties
5.) Place, spaced evenly in bottom of pyrex glass baking dish. Donot grease pan.
6.) Bake 30 minutes at 180C. or 250F.
7.) Squeeze Fresh lemon juice over patties.

Makes six ,16gram. each, patties.
