    1 pound pasta of choice(Rotini)
    2 pounds fresh spinach, ripped and cooked
    8 oz. low fat cream cheese, room temp.
    2 large eggs
    1/2 cup bread crumbs, plain
    1 TBS. Smart Balance Light
    8 oz. part-skim mozzarella,shredded
    1 clove garlic, minced
    1 medium onion, diced
    1/2 cup parmesan cheese, grated
    1/4 tsp. salt
    1/2 tsp. black pepper


Makes 16 servings as side dish.

Preheat oven 350 degrees. Cook pasta to package directions. Rip or chop spinach and cook. In large bowl, mix cream cheese and eggs. Add the mozzarella, garlic, onion, parmesan, salt and pepper. Mix well. Add the spinach and pasta and mix again.
In separate bowl, add bread crumbs and smart balance. Blend together. Pour spinach mixture into casserole dish and sprinkle top with bread crumb mixture. Bake for 40-45 minutes.
