    12 large bell peppers, assorted colors

    3 Tbsp olive oil
    1 large onion, chopped
    8 cloves garlic, chopped

    2 lbs ground turkey

    1 tsp salt
    2 tsp Worcestershire sauce
    1/2 Tbsp paprika
    1/2 Tbsp ground mustard

    2 cups cooked rice
    12-oz package frozen mixed vegetables

    3/4 cup shredded cheese


Remove the tops and seeds from peppers. Chop tops and two of the peppers.

Preheat oven to 350F

Heat oil in large skillet and saute onion, garlic, and peppers. Add meat and spices, and cook thoroughly. Add rice and vegetables and mix until vegetables are cooked.

Arrange peppers into glass baking pans and spoon mixture into peppers and top with shredded cheese, bake for half an hour. You can shorten the bake time by half by heating the empty peppers in the microwave for about a minute each while the stuffing simmers.

Makes 10 servings (1 serving = 1 pepper)
