My family has eaten this meatloaf for years. It's such a colorful dish. We serve it with mashed potatoes, green beans and corn which provides the most pleasant looking meal. Ingredients

    1 lb lean ground beef
    1 medium sized onion, finely chopped
    1 package of instant oatmeal - original flavor
    (**OR** substitute 1/3 cup of dry oatmeal)
    1 large egg
    1 tsp salt
    1/2 tsp black pepper
    1 can tomato sauce - 8 oz size

Directions

Preheat oven to 350 degrees.

In a large bowl, combine all ingredients EXCEPT the tomato sauce. Only add 1/3 of the tomato sauce to this mixture. Stir it up and spread into a 9x9 baking dish. Spread the remaining tomato sauce to the top. Cook uncovered for 1 hour at 350 degrees.

Makes 9 equal servings. Enjoy.
