Ingredients

    3 cups cooked whole wheat macaroni
    1 Tbsp olive oil
    1 cup chopped onion
    1.5 cups kidney beans, drained and rinsed
    1/4 tsp cinnamon
    1/8 tsp nutmeg
    2 cups pasta sauce
    2 cups swiss chard, chopped (or spinach)
    1 cup plain yogurt (2%)
    3 egg whites
    2 Tbsp grated parmesan cheese

Directions

Fry onions in oil until tender. Remove from heat then add kidney beans and mash lightly. Add cinnamon, nutmeg and pasta sauce and mix well.
Spray a 6x10 baking pan. Spread 1/2 of macaroni in pan, then cover with chard. Spread 1/2 of pasta sauce over chard. Top with remaining macaroni, then remaining sauce.
In a small bowl, whisk yogurt, egg whites and cheese together. Spoon evenly over casserole.

Bake uncovered for 45 minutes at 375F.

For a browner top, casserole can be broiled for 5 minutes after baking.
