Ingredients

    1 envelope onion soup mix
    1/4 cup oil (I used canola)
    1/4 cup butter, melted
    1 tsp thyme
    1 tsp marjoram
    1/4 tsp pepper
    8 medium potatoes, washed and cut into quarters

Directions

Preheat oven to 450 degrees.

In 9 x 13 pan or shallow roasting pan, melt butter in microwave. Then add remaining ingredients except potatoes. Mix well. Add potatoes and toss to coat thoroughly. Bake for 60 minutes--covered, stirring potatoes 2-3 times throughout--until potatoes are golden brown and tender. Can top off with chopped parsley.
