Introduction

Ingredients

    1 medium red bell pepper, stemmed, seeded and halved
    1 medium yellow bell pepper, stemmed, seeded and halved
    1 medium orange bell pepper, stemmed, seeded and halved
    2 tsps olive oil
    1 tbsp white balsamic vinegar
    1 1/2 tsp honey
    kosher salt
    black pepper
    pinch cayenne pepper (optional)

Directions

1. Set oven rack to 4" below broiler and preheat to high. Add peppers to heavy duty cookie sheet and broil until peppers are charred but not burned, approx 7-10 minutes. Turn over halfway through cooking time.
2. In a small saucepan whisk together olive oil, balsamic vinegar, honey, salt and pepper to taste and cayenne (if using). Cook on low heat for 5-7 minutes, stirring frequently , or until glaze has reduced and thickened slightly. Set aside.
3. Remove peppers from broiler and place in a large bowl. Cover with plastic wrap and let sit for 5-10 minutes. Remove and carefully peel skins off of peppers. Slice into strips and return to bowl.
4. Pour glaze over peppers and stir to coat. Adjust seasoning to taste and serve. Makes 3 servings, approx 1/2 cup pepper strips.
