Introduction

Cajun-spiced seafood casserole, using frozen fillets and frozen shrimp.

Nutrition data leaves out 1.25 cups of the soup and .25 cup of the breading because that is what was left behind in the baking pan when I made this and I wanted the nutrition data to be correct. Your mileage may vary!

Ingredients

    1 cod or other whitefish fillet
    3 oz raw frozen shrimp
    2 cups creamy corn & roasted red pepper soup
    1 cup bread crumbs
    1.5 tbsp margarine
    1 tsp Cajun seasoning
    .25 tsp ground black pepper

Directions

Remove frozen fish fillet from freezer and thaw in refrigerator until still frozen, but pliable. Rinse fish and pat dry, then cut into two portions.

Preheat oven to 350 degrees.

Melt margarine. Blend in a blender, at low speed, the bread crumbs, Cajun seasoning, black pepper, and margarine until all are well mixed and breadcrumbs are coarse-ground.

Place the 2 cod fillet pieces into a foil-lined 8x8" glass baking dish. Surround with shrimp.

Pour soup over fish and shrimp. Soup should fully cover fish and shrimp. Sprinkle seasoned breading mix over soup until covered.

Shake a bit more Cajun spice and black pepper over entire top if desired to add some kick.

Bake 45-50 minutes, or until fish is opaque inside and flakes easily with a fork.

Serves 2.
