    2 tbs vegetable oil
    2 tsp crushed red pepper flakes(more/less depending on taste)
    4 cloves garlic chopped
    2 inches ginger root peeled and grated
    2 cups sliced mushrooms(any kind works)
    2 cups bok choy leaves, sliced into strips
    salt and pepper to taste
    4 cups chicken broth
    1 cup clam juice
    1lb peeled and deveined shrimp
    1/2 lb whole wheat vermicelli or thin spag
    1/2 cup scallions sliced length wise


Heat a medium soup pan over medium heat. Add the oil, red pepper flakes, garlic, ginger, mushrooms, and bok choy leaves. Season to taste with salt and pepper. Add the chicken broth and clam juice. Put a lid on it and bring to a boil.

Add shrimp and noodles and cook three minutes. Add scallions and cook two minutes, then turn the soup off and let it sit for 3 minutes. Adjust salt and pepper and serve. I like to use some hot chili oil on mine.
