Ingredients

    1.5 cups rolled oats
    .75 cup whole-wheat flour
    1 cup buckwheat flour
    1.25 Tbsp baking powder
    .125 tsp sea salt
    4 egg whites
    2.5 cups buttermilk or plain kefir
    2 Tbsp avocado, sunflower, or safflower oil
    1 Tbsp best quality
    1.5 Tbsp organic honey
    cooking spray

Directions

yield 9 x 4" / 10 cm pancakes
1. Place all dry ingredients in a medium size mixing bowl. In another medium mixing bowl place all wet ingredients. Add wet ingredients to dry ingredients and mix until just blended. The mixture sit on the counter for half an hour so the oats can soften.
2. Spray a skillet or griddle with cooking spray. Set over medium heat. Using a ladle, measure .5 cup of batter onto hot skillet. Let cook until edge are lightly browned and bubbles start to appear on top of the pancakes surface. Flip and continue cooking until sides are golden brown.
