    2 tbsp Dried egg whites
    ( you can use 3 fresh egg whites and omit the water also)
    6 tbsp warm water
    6 tbsp powdered sugar
    1 tsp vanilla extract (or cocoa powder)


Yield about 38 1.75'" cookies

-Preheat oven to 225F
-Line cookie sheet with parchment paper
-Add the dried whites to warm water and break up clumps, let sit for 2 minutes
-Beat with an electric whisk on medium until the whites have dissolves and the mixture becomes frothy.
-Add vanilla extract
-Increase mixer speed to high and add the powdered sugar one tbsp at a time until very stiff peaks form
-Spoon or pipe dollops of meringue onto parchment paper leaving about half an inch between
-Bake for 75-90 minutes watching closely towards the end to avoid browning
-Turn off oven and leave the door ajar to cool
-Store in airtight container

*Note: I used dried egg whites because I had them in the pantry already, fresh whites are the preferred ingredient
