    *Egg white, 2 serving (remove)
    Spinach, fresh, 1 cup (remove)
    Red Ripe Tomatoes, .25 cup, chopped or sliced (remove)
    Mozzarella Cheese, part skim milk, 1 oz (remove)


sautee spinach in 2 tsp olive oil. Add tomatoes. Add eggs. Scramble until done. Mix in cheese. Makes 1 serving
