Ingredients

    1c. whole wheat flour
    2tsp. baking powder
    1/4tsp. sea salt
    1 Egglands Best egg
    1T. Splenda
    1T oil
    1c. skim milk


Directions

Mic dry ingredients. Add egg, oil, and milk just until flour is moistened. Batter will be slightly lumpy. For lighter pancakes or waffles, separate eggs, beat the egg whites until stiff, and fold into batter the last minute. Cook immediately on a 375 degree griddle, turning once, or in a hot waffle iron.

Yield: 12 2" pancakes

  • Hmm! good recipe. I didn't have Splenda so I used a tablespoon of raw sugar, the pancakes were a little bitter, maybe Splenda is sweeter than raw sugar? I also added 1 C frozen blueberries :) Made 12 nice sized pancakes, fluffy and crispy! - 3/1/09
