Ingredients

1 and 1/3 to 2 lbs Chicken tenders
Salt and pepper to taste
1 cup Flour
2 Eggs beaten with a splash of milk or water
1 tsp Dijon mustard
1 cup Plain bread crumbs
1 cup Pecans finely chopped
1/2 tsp Nutmeg
Cooking Spray
Zest of 1 orange
Dressing
1/4 cup Maple syrup
1/4 cup Tangy BBQ sauce
The juice of 1 naval orange
1/4 cup balsalmic vinegar
2 Tbsp olive oil
3 Hearts of romaine lettuce, shredded
6 Radishes, thinly sliced
6 Scallions trimmed and chopped
Salt and pepper to taste
Directions
Beat eggs together with mustard. Process pecans, bread crumbs, orange zest and nutmeg in a food processor. Add salt and pepper to flour. Coat chicken with flour, then eggs, then crumbs. Put on parchment on baking sheet and bake at 500 for 15 minutes, flipping halfway thru.
Mix dressing ingredients, drizzling in oil last, as for vinegrette. Toss half dressing with salad ingredients and top each serving of salad with 2-3 tenders, drizzled with more dressing
