    2 1/4 cups Whole Wheat Flour
    2 1/2 tsp Baking Powder
    1/2 tsp Kosher salt
    `/1 tsp Nutmeg, ground
    3/4 cup Honey
    1 tsp Lemon Peel, grated
    1 cup Apples, chopped fine
    1/4 cup Walnuts, chopped
    2 Large White Eggs
    1/2 cup I Can't Believe It's Not Butter
    1/2 cup lite Soy Milk

    Strussel Topping

    1 Tbsp I Can't Believe It'a Not Butter
    1 Tbsp Flour, whole grain
    1/5 cup Sugar


Preheat oven @ 350 degrees

Sift flour, baking powder, salt and nutmeg in a large bowl. Stir in lemon peel, chopped apples and nuts.
In a seperate bowl, beat eggs. Melt butter and add honey. Take butter mixture off of heat and add soy milk.
Add wet ingredients to dry mixture, stir lightly until flour is moistioned and mixed well.
Turn into well greased loaf pan.

Strussel Topping
cut together until it resembles corn meal. Sprinkle on top of bread mixture.

Bake for about 1 hour.
