Introduction

Burrito style chicken fajitas with bell peppers and onions. Burrito style chicken fajitas with bell peppers and onions.
Number of Servings: 6

Ingredients

    1-2 large onions, sliced thin
    2 bell peppers, sliced thin
    3 chicken breasts, raw, shredded
    1 tbsp olive oil
    3 tbsp Mexican Style Chili Powder

Directions

Using food processor, slice onions and green peppers and set aside. Using food processor, slice chicken breasts or cut into thin strips.

Heat olive oil in large skillet. Add sliced onions and green peppers. Sautee until onions are caramalized. Add chicken to onion and peppers. Add 1-2 tbsp of chili powder. Cook until chicken is cooked all the way trough.

Add remaining chili powder. Stir. Cover. Reduce heat to low and allow to simmer. Makes (6 )1/2 to 1 cup servings.

Serve with tortillas, sour cream and shredded cheese.

Option: slowly stir in heavy cream into mixture and reduce down to create saucey mixture. Serve over rice. Mexican meets Indian. Yum!
