Number of Servings: 4


    1 whole chicken breast no skin or bone
    1/2 tbsp sesame oil
    salt and pepper to taste
    1 head of romaine lettuce rough chopped or torn
    1/2 head read leaf lettuce chopped or torn
    1/2 cup sliced strawberries
    1/4 cup fresh or frozen blueberries
    1 cup cubed honey dew melon
    1 cup cubed watermelon
    1/4 cup strawberries pureed
    1 tablespoon balsamic vinegar


Rub chicken with sesame oil, salt and pepper. Grill until cooked thoroughly.

While chicken is grilling prepare lettuce's, strawberries, melons and blueberries, reserving pureed strawberries and balsamic vinegar.

Place pureed strawberries and balsamic vinegar in a sealed bowl or jar and stir until well incorporated. Set aside (this is your dressing)

Cube grilled chicken into bite sized pieces. Place lettuces together, add fruits in layers scattering around salad. Place chicken on top then drizzle dressing over top and mix gently to cover.

Serves 4.
