Introduction

Hummus is so versatile and tasty. My latest use for it is to make a delicious sandwich of it on sprouted grain bread (like Ezekial bread), with roasted red peppers and thinly sliced avocado -- an idea borrowed from an adventurous local sandwich shop. My latest use for it is to make a delicious sandwich of it on sprouted grain bread (like Ezekial bread), with roasted red peppers and thinly sliced avocado -- an idea borrowed from an adventurous local sandwich shop.

Ingredients

    1 15-oz. can of Libby's Organic Garbanzo Beans, drained (RESERVE LIQUID)
    1 T. tahini sesame paste
    1 T. olive oil
    Juice of half to 1 lemon (start with half and add more, as desired, to taste)
    1/8-1/4 c. of reserved liquid from beans
    1 medium clove of garlic, very finely minced

Directions

Add drained beans, tahini paste, olive oil, lemon juice, and small amount of reserved liquid from the beans into blender or food processor. Process to a smooth consistency, adding slightly more liquid if needed, to achieve desired texture. Mince garlic by hand, using a sharp knife, not a press, and add to mixture AFTER processing. (This is important because if the garlic is overprocessed, it will turn extremely pungent and unpleasant.)

If you wish to add more protein, you can supplement by blending in half of a small block of soft tofu (which doesn't noticeably change the taste). You may also wish to add green onions, and/or parsley to freshen the taste, but be aware that this will change the color to a greenish tinge if you process those ingredients into the mixture.

Makes 6 quarter cup servings.
