Number of Servings: 4


    1 lb Beef Chuck Roast, trim excess fat
    1 bag of baby carrots
    1 cup celery cut into pieces
    1 cup onions, chopped
    1 can diced tomatoes
    1 tsp crushed garlic


In a 9 x 13 roasting pan w/lid (I use stone ware) distribute olive oil over the bottom. Mix chopped veggies in roaster. Mix garlic into diced tomatoes & pour over veggies. Mix all veggies & distribute evenly over bottom of roaster. Place Chuck Roast on top of veggies, cover with lid

Bake at 325-350 until desired doneness.
