Number of Servings: 8


    4 eggs, beaten
    1 package frozen chopped spinach (thawed and drained)
    8 oz fresh mushrooms, sliced
    1/2 red onion, coarsely chopped
    5 oz reduced fat swiss cheese
    4 oz sharp cheddar cheese
    1/3 c. milk
    1/2 tsp. salt
    pepper to taste
    Tabasco sauce (optional)


Saute mushrooms and onion with the salt to remove the liquid (about 5 minutes). Set aside and let cool. Mix eggs and milk. Combine mushrooms, onions, spinach, cheeses and and the tabasco sauce (if you want it). Pour the egg/milk mixture over it and stir to combine. Pour in a greased (I spritzed with Pam) 9 inch pie plate. Microwave for about 14 minutes on 60-70% power.
* Note: You can use fresh spinach for the frozen. Use about 10 cups and let steam for about 5 minutes. Add no extra liquid. Drain well.
