If you don't like cabbage rolls, this is a great alternative, and a lot less work. Another time saver is to use a bag of coleslaw mix from the grocery store instead of shredding the cabbage yourself. Ingredients

    Extra Lean Ground Beef
    Onion and Garlic
    Salsa
    Beef Broth
    Rice
    Cabbage

Directions

In a large skillet, brown beef with onion and garlic. Add the rest of the ingredients, bring to boil, then lower heat, cover and simmer for 30-40 minutes. The cook time will depend largely on the type of rice used, I like to use long grain brown rice which takes longer than white.
