    1 pound Tomatillos, hulled, cut in half
    3 Tbl Olive Oil
    2 Chicken breasts, skinless, boneless, pounded thin
    4 Cups Chicken Broth
    1 Onion, chopped
    1-2 Jalapenos, chopped
    3 Garlic Cloves, chopped


Heat oil over medium high heat in the bottom of a large sauce pot, brown chicken until cooked through, about 2 minutes on each side. Remove, shred, set aside.

In the same pot sautee chopped onions and chopped garlic cloves until browned, about 4-5 minutes. Add chopped jalapeno and chopped tomatillos to mixture, sautee 1 minute. Add chicken broth, bring to boil. Reduce heat to low and simmer while covered 15 minutes.

Transfer mixture to food processer or blender, puree. Place back in to stock pot, add chicken and heat through. Taste, if not spicey enough add a touch of cayenne pepper.

Serve with cilantro sprinkled over the top and optional sour cream.
