    3 jumbo eggs
    5 oz frozen spinach, thawed
    pinch of cumin
    salt and pepper to taste


Beat eggs with a tablespoon of water until fluffy.
Add ricotta and spinach. Add seasonings.
Cook in a hot griddle or pan until set.
