Introduction

Plenty for a crowd! Plenty for a crowd!
Number of Servings: 28

Ingredients

    5 lbs potatoes ( I use red b/c they are tender & have a lower glycemic index)
    5 eggs, boiled
    2/3 cup chopped onion
    1/4 cup prepared mustard
    1 cup mayo
    1 cup Miracle Whip
    2 tablespoons white vinegar (cider was the only one listed) or dill pickle juice
    2.5 teaspoons salt, .5 teaspoons pepper

Directions

Peel, chop and boil potatoes until tender. Cool. Boil eggs and cool. Chop onions, peel eggs and put all ingredients together in a large bowl. Refrigerate.

Yields about 14 cups potatoe salad....enough for 28 half cup servings.
