Introduction

A tasty recipe that's easy to make in the slow cooker. Passed on to me by my mother, but think it was originally a Cooking Light recipe. A tasty recipe that's easy to make in the slow cooker. Passed on to me by my mother, but think it was originally a Cooking Light recipe.

Ingredients

    3 boneless, skinless chicken breasts
    1 can Kern's Mango Nectar
    1 cup chicken broth
    1/4 cup lime juice
    1 tsp ground ginger
    1 tsp ground cinnamon
    1 tbsp cornstarch
    3 tbsp water

Directions

makes 3 servings

1. layer chicken breasts in the slow cooker.
2. mix together nectar, broth, lime juice, ginger and cinnamon.
3. Cook in slow cooker - 4-5 hours on high or 8-10 hours on low.
4. Remove chicken and set aside.
5. Pour juices from slow cooker into a medium pot. Boil down until juices are reduced to about 1 cup.
6. Mix cornstarch and water, pour into reduced juices. Stir until boiling, pour over chicken and serve.
