My favorite alternative to a sweet breakfast. You can play with the ingredients using quinoa as a base. If you add meat (diced ham is a nice addition) add it with the onion. Ingredients

1 c onions, chopped
1 tsp olive oil
4 c water
1c potato, peeled and diced small
1c quinoa (rinse well)
1 cube Chicken Bouillon (can substitute vegetable)
1 package frozen chopped spinach
Spices (Cumin, Nutmeg, Pepper)
.25 c toasted wheat germ (optional)
1 c Fat Free Half and Half
Directions
Makes 5 servings, approximately 1.5 cups each.
Saute onions in olive oil on medium low until they become transparent. Add water and diced potatoes. Bring to a boil. Add quinoa and return to boil. Cover and let cook on low for 10 minutes. Add spinach, bouillon and spices. Let cook on low for another 10-15 minutes, stirring occasionally. Add wheat germ and Fat Free Half and Half.
Once porridge heats to desired temperature, you can remove from heat and serve. If you are storing it to eat later, remove from heat immediately and let cool. Porridge will maintain its texture when stored in fridge.
