Number of Servings: 4


    Bush's, Black Beans, 0.5 cup
    Red Ripe Tomatoes, 1 cup, chopped
    Yellow Sweet Corn, Frozen, 0.5 cup kernels
    Onions, raw, 1 cup, chopped
    Chili powder, 1 tbsp
    Cumin 1 tbsp
    Chicken Breast, no skin, 2 breast, bone and skin removed , chopped
    La Tortilla Factory, Whole Wheat Low Carb Tortilla, 4
    Cheddar or Colby Cheese, Low Fat, 0.5 cup, shredded
    Salsa, 1 cup


Rough chop the Chicken Breasts.

Heat non-stick skillet and add small amount of EVOO. Add chopped onions and chicken and spices, sautee till chicken almost cooked thru. Add Beans, Diced Tomatoes, Corn , and Salsa, Heat thru.

In a second skillet, heat the tortillas.
Assemble the burritos, putting 1/8 cup of cheese on each one and dividing the filling into 4 portions. roll-up burrito and enjoy!
