Ingredients

    1/2 cup flaxseeds
    2/3cup mashed ripe banana
    1/4cup sugar
    1/8cup splenda
    1/4cup vegatable oil
    2 large eggs
    1 1/2cup whole wheat flour
    1/4cup flaxseeds
    1/2t baking powder
    1/2t baking soda
    1/2cup whole pitted dates, chopped
    cooking spray

Directions

Place 1/2 cup flaxseeds in a blender or food processor and process until ground to measure 3/4 cup flaxseed meal. Set aside.
Preheat oven to 350*
Beat the banana, sugars, oil and eggs at medium speed until well blended. Lightly spoon flour into a dry measure and level with a knife. Combine the flour, flaxseed meal, 1/4 cup flaxseed, baking powder and soda and 1/2t salt and gradually add to the sugar mixture, beating until well blended. Stir in chopped dates. Spoon into a 8x4 loaf pan coated with cooking spray. Bake bread at 350* for 55 minutes, or until a wooden pick inserted in the center comes out clean. Cool 10 minutes in pan then remove from pan. Cool completely on a wire rack
