Ingredients


    1 container part skim Ricotta Cheese
    1 box Lasagna Noodles
    1 Egg
    1 stalk Broccoli
    small bunch Parsley
    1/2 cup Parmesan Cheese
    1 package mixed Italian cheese
    1 can diced tomatoes
    1 Tb Garlic powder


Directions

Preheat oven to 350 degrees. Precook lasagne noodles until not quite al dente. Meanwhile, in a food processor, pulse broccoli and parsley until almost a grainy paste. Mix broccoli mixture in a bowl with parmesan, egg, garlic powder, and ricotta. In rectangular pan, lay one layer of noodles, then spoon on a layer of the ricotta mixture. Keep layering until you end up with a top layer of noodles. Pour can of tomaotes over the top and sprinkle cheese on top of that. Bake covered for 30 minutes, then an additional 10 minutes uncovered or until the cheese is melted and slightly brown. Makes 6 good sized servings, but can easily be stretched to make more, smaller portions.
