Ingredients

    .5 cup Egg Beaters
    1 cup of fresh Spinach
    .5 cup of sliced Mushrooms
    .25 cup Reduced fat cheddar cheese
    1.5 slices of bacon

Directions

1 serving
cook bacon in a frying pan and remove
cook mushrooms in pan
add some garlic
when mushrooms are brown add spinach
when spinach is soft add egg beaters
let cook for a few minutes
cut up bacon and put in egg
flip omelet
sprinkle cheese on top
let cook for a few minutes more
put on a plate and enjoy
