Beef and Pasta with a Tomato Sauce Beef and Pasta with a Tomato Sauce

    1/2 Pound (226 g) Twist Pasta
    1 Pound Ground Beef
    1/2 Pkg Taco Seasoning, Reduced Salt
    1 Medium Green Pepper, chopped
    1 Medium Onion, chopped
    1/4 Cup Sour Cream
    2 Cans Tomato Soup, condensed
    1 Cup Part-Skim Mozzarella Cheese


Chop green peppers and onion. Cook the pasta; drain. Cook Beef until browned. Add the peppers and onion; cook 5 more minutes. Add the taco seasoning and 2/3 cups of water. Simmer for 5 minutes or until almost all liquid is evaporated. Add 1 Can of the soup.
In a 2 quart baking dish, Combine the pasta, beef mixture and the other can of soup. Add 1/2 cup of cheese and mix together.
Top with rest of the cheese. Cover and bake at 350 for 30-40 minutes. Uncover and broil for another 5 minutes or until cheese is browned.

Makes 7 1-Cup servings.
